I am also very interested in getting a exhaust system, what kind of gains will I see with a stock car? Apart maybe from induction.

What kind of system should I be asking the exhaust shop for?

If you buy the right one, and follow the directions, you can do it yourself. They're
mostly made so you can put them on with very little cutting and modifying. Most
of the pieces clamp on. At most, you will be cutting before the "Y" pipe and
clamping it on, then the rest clamps on.

The factory one goes dual from the headers and "Y"s into a single. This one "Y"s
back out into dual. So, this will have a measured spot where you'd cut after the
factory "Y" into one, and then put this kit's "Y" pipe on, then connect all the other
pieces. It's really not that hard.
